First cook with new NOMEX gaskets

My first cook with the new gaskets installed was a winner. Prosciutto wrapped scallops with steamed asparagus on the egg. These were some very large scallops. 8 of them were over a pound. I wrapped the scallops and patted dry. Seasoned with salt and fresh ground pepper. I pre heated a cast iron skillet in a 375 deg dome egg. I added 3 or 4 roughly sliced cloves of garlic to the skillet I added a large pat of butter and an equal amount of olive oil (to raise the smoke point of the fat) cooked the scallops approx. 4 minutes on each side. They turned out to be awesome. My girlfriend Kat told me that it was her favorite meal off the egg so far. I guess I'll have to do this one again.
