Vidalia Onion help!

Hi folks,
The Shriners just had their yearly vidalia onion sale and I picked up 20# of 'em! I'm looking for recipes and a way to store them raw. I seem to recall my mom hanging them in the basement in pantyhose with a knot between each onion so they don't touch. Can this be true? Thanks for your help.[p]Jeff

Your Mom was right. Store in a cool, dark place and if possible try to make sure they don't touch each other. We put them in a cardboard box with crumpled newspaper around them.[p]They're a treat on the egg!

lo n' slo,[p]Did some last night. Slice off the top and root ends and peel off papery outer layer, then core out a hole in the middle, careful not to go all the way through. Add 1 beef boullion cube, 1 tbs butter, S&P and a splash of red wine. Wrap in a double layer of foil and throw on the egg. I threw mine on last night when I was doing steaks, T Rex method. I would say that they were on for about 45 min at temps from 800 down to 400.[p]Good Luck!

i saw that the onions from vidalia were late this year being a west coaster i have yet to see any send some west!

ColaCooker,[p]I sauted (sp) some yesterday with Raging River and poured them over chops (bone in) with The Spin.[p]Beyond yummy.[p]Next to Copper River season this is the best.[p]Mick

MickeyT, ahhh, and Copper River Salmon will be here quite soon according to our local fish distributor. I'm walking talking proof that you can freeze it using the Food Saver. it keeps well so that you can enjoy it year around. In fact i just had my last CR in April. Of course as much as it costs it's like having non-earning assets in your freezer, but so be it!
