Well, we got some great tips a few days ago, and the ribs are about an hour and half in at this point.
Temp is at 300....trying to get it to come down...but not having much luck yet.

try to close the daisy wheel so only a vry small slit is showing and the bottom vent is open as wide as the height of a dime...Bone Daddy's Competition BBQ & Catering

Thanks! Temps are pretty good now....just over 250. I'm about 20 minutes away from pulling and foiling. Will post another pic soon. ;-)

Just put them on, in foil, with brown sugar, honey and apple juice. Really tight fit!! -
