It's actually pretty easy, I set up the fire indirect with platesetter (legs-up) and grill on top, to 400°F

Placed the whole "Asadero" Cheese block on the pyrex bowl and placed the pyrex on the grill, then shut the lid for it to melt... A nice crust will form and you have to watch out for higher temp or it can burn...

In the meantime fry some chorizo inside in the stove until all is separated and then add it to the cheese with all the fat that it rendered...

check every 10 minutes to see if it melted completely and use a spoon to finish incorporating chorizo into the cheese.

Use this cheese straight out of the egg to make some quesadillas...
