The pork:
About 3lbs of butt cut into chunks
water to cover
1 onion rough chopped
1 serrano chopped
3 cloves garlic chopped
orange zest cut off with a veggie peeler
lemon juice
chicken bullion
lots of cumin
lots of ancho chile powder
couple bay leaves
salt
pepper

Cooking the pork till tender, it has been on for about 3 hours and is getting close to done.

Just pulled the pork off the egg and got it sitting on the stove on low waiting for Carolyn to get home from work. I hope that I got a little room in me by then :laugh: -

Thanks, for the pork, I simply mixed all of the below together and cooked it on the egg with heavy smoke (1st hour) until it was tender (about 4hrs). Man was it good! I served it with some advocado as a garnish mmmm.

lemon juice - 1 lemon
chicken bullion - about 3 tble
lots of cumin - about 1/2 cup

salt - 1 tble
pepper - 1 tble
