I picked up a package of this delicate white fleshed fish from Costco the other day. I hadn't ever had any and thought that I would give it a whirl last night. Really good; I cooked it at about 500° dome until flaky (about 3 min/side) this fish reminded me a lot of flounder, but was relatively cheap. If you haven't tried any, I would definitely recommend it. It is really delicate, so I would recommend a fish basket (I almost destroyed it trying to turn it :( hence no pics.

I served it with a Charred Serrano-Basil Vinaigrette and Horseradish-Tarragon Tarter sauce that I made from one of Bobby Flay's recipes. They were both fantastic an highly recommended as well.
