Today I am doing 4 racks of baby back ribs for a co-worker of mine and I’m doing them without the help of the DQ2 :( it's been so long since I’ve did BBs or any slow and low with out that set it and for get it mentality it's scary

I hope all goes well just wanted to throw that out there the DQ2 makes egging so much more easier :silly: the last time i did a slow and low and some frieds came over and saw the DQ2 hooked up to the egg and all the wires dangling they thought i was making a BOMB :laugh: :laugh:

Just creep up on 250 dome, let stabilize. Adjust if necessary after the meat has been on for 30 minutes. Otherwise, don't peek till about 4 hours.

I've has success doing them for 5-6 hrs with the DQ2 should i rethink my plan not that i'm not using it

You will be fine. 250 dome all the way, stay near by to check and enjoy the cooking with a drink.

Time to do it the 'old fashion way'.
One other tip; Build a good fire in a clean egg with large lump built in a tipi fashion at the bottom followed by medium then small lump to fill the firebox. A good fire makes good BBQ.

Egg is up to 250 holdin steady the other one is at 200 and hopefully rising i'm checkin and adjusting as needed

Good luck with the cook today. The last time I had to do a low-and-slow without the DigiQ was when the power when out. Oh yeah...one other time when I had the Q hooked up to the LBGE, and I wanted to do some other stuff on the SBGE.
