Speaking of homemade tortillas

All that talk about homemade tortillas made me come home and make a dozen, I'd forgotten how good they are. Heck, I even forgot I had a press. Nice fresh soft warm tortillas for some tacos, delish. -RP

Not much better than a fresh made flour OR corn tortilla!! A little butter, salt...MMMMMmmmm!!
-
Lookin good, RP! As always!

I have made a lot of fresh corn tortillas, but never flour ones. I did not realize that the press would work with flour. I thought there was too much 'spring' in flour dough (think pizza) and it needed to be hand rolled. This is great news.
What is your recipe? -
2 cups all purpose flour
1/2 t salt
1/4 cup fat (I used olive oil, lard is the best)
2/3 cup warm water
I a bowl rub the oil flour and salt together with your fingers until it is completely incorporated. Add water and work it with a fork. When it comes together, knead until smooth. Let the dough rest 2 hours in the bowl covered with plastic wrap to prevent drying. Knead the dough several times during the rest. Divide the dough into 12 pieces and shape into balls. Press then cook on a griddle or in a pan over medium heat flipping often until slight browning occurs. -RP -
Wow, RP--those look great, and I'll bet that the tacos will be excellent!

hehe nice going Randy, I'm sure they were delicious as they look great...
but what about that bottled salsa? :P
two burnt tomatoes with 10 burnt jalapeños and 2-3 garlic cloves on the blender with a little olive oil should get you on your way hehe
also, if you'd like to experiment, next time, try grilling them direct just below 400°F dome temp...
cheers -
I make a lot of different salsas but only when I have fresh tomatoes from the garden. I'm a tomato snob, thanks for the inspiration today. -RP

Cool - I'll have to try this! I've always used a rolling pin for the flour ones; if I could use my press instead I could turn them out a lot faster.
I love a griddle-toasted flour tortilla with cream cheese on it for breakfast!Egging in Crossville, TN -
Harina or masa? (that was for you beli, it is the extent of my spanish)

Randy,
While homemade salsa is always the best, when the tomatoes aren't in season see if you can find this salsa
It's in whole foods in all of AZ I think. I bought it from the owner at the phoenix farmers market. there are pretty much no jarred salsas that I can stand, but these changed my mind. they are the best I have ever found.
fair warning. I love spicy, and can cover food in Tabasco or Sriracha, but the medium is still spicy enough for me for most things.. and pineapple habenero is my favorite. -
These are flour tortillas. -RP

Randy,
They look really good. Years ago, in Scottsdale, I bought an electric press. Worked pretty well but I just use the cast iron one now.
Did you get my e-mail?

There's nothing like a fresh homemade tortilla. Not like I've made one, but I've consumed my share.LBGE Katy (Houston) TX

Thanks for posting the recipe.

Do you grow them natural? or do you use another techinique like hydro/aeroponic growing? I've been looking at the Aerogarden series of aeroponic systems but haven't resolved myself to getting one (I don't know why I consider it expensive after all, it's just a plastic tank with a flourescent light and a timer) hehe...
have you had any experience with this? -
My sister has the herb one and I think its a joke. It won't produce enough of anything to really be of any value, at least that was my impression of it. -RP
-
good to hear that... so I'm guessing you grow your tomatoes in your garden then?
