Fattie Advise/Sauteed onion/Celery

Top of the morning Eggers,
Only 7 a.m. here in AZ.
I have two fatties, Jimmy Dean Hot & Maple, do most of you prefer one over the other???
I like the combo of sauteed onion and chopped celery, any reason not to saute a little of both to put in the fattie along with (Not) sauteed bell pepper, Tillamook Extra sharp cheese and a little pepper jack cheese???
Or do you think the celery will be out of place in the fattie??? :(
If I saute them, should I cool in the fridge before putting in the fattie??? I have the small warming up now. Not sure if I should just do one for now or both in case I don't like something

That sounds interesting! I would think you could put it all together without refrigerating the veggies. Give us a report with some pictures when it's done!

I was kind of thinking the same thing but thought I would play it safe and see what others thought being as this will be my first.
