For a newbie what does it mean to hot-tub steaks?

Place them in a hot water bath to heat them evenly to 100-125 degrees. Do this for an hour or so and then sear in a 500 deg cooker till done to your likeness. I like 130, but that's just me.

It's suggested that steaks cook more evenly if you raise the internal temp of the meat before grilling. You do this by putting the meat in a bag and then in a bowl of 100 degree water for an hour or so before grilling.

Hmmmm 130 is good, 125 and tented for 10 minute rest is mo betta :laugh:

I'll have to try that. Normally it gets away from me and comes out 130. Got a Thermapen for Christmas, now there is no longer an excuse.

you have already been told how - here's a pix of the results of hot tubbing. Note the uniformity of color.
Re-gasketing America one yard at a time. -
First you season.
Place in zip-lock bags get as much air out as possible.
Put in Hot Tub for 1-hr.
Sear at 600* for 2-min. per side.
Let rest for 10-min. if internal temp is not up there roast a little longer
