Fish Tacos For The Lazy

Fish Tacos continue to grow in popularity, and rightfully so. After all they are very tasty, easy to make and can be easily altered to suit individual tastes.
We wanted a fish taco not long ago but didn't want to drive ten miles to the expensive restaurant that offers them as their premier dish. So we looked in the frig and found some Gorton Beer-Battered Crispy fish filets and some red cabbage. But what about the sauce???
We decided to try our favorite dip, Lighthouse Jalapeno Ranch, and the taco turned out great.
The sauce is good by itself but if you want to soup it up you can add a goodly amount of cilantro and maybe some sugar or honey, and blend well.
Add the well heated fish, some thinly sliced red cabbage and sauce to a corn or flour tortilla and you have a great midday snack or a delicious dinner. If you use the sauce right out of the bottle you will need to add some cilantro to the taco. Cilanto is a must...

In answer to your question about the turkey thighs, what you see in the pan is both oil & chicken stock. I liberally coat the thighs with olive oil and then generously dust them with Paula Deen's "house seasoning" mix (salt, pepper & garlic powder). After 45 minutes in a 400* oven they come out of the pan. That's when I add the vegetables and toss them in the pan juices, adding a bit more oil if necessary so that they all have a coating. The thighs go on top and it all goes back into a 350* oven for 35 minutes. After 15-20 minutes I add the chicken stock. Enjoy!

Never been to Rubios, but there is a restaurant in Key West, FL, called the Old Town Mexican Cafe that makes "Baja Tacos" with dolphin and cilantro cream sauce, that are the absolute best fish tacos I've ever had. Now, every time I see fish tacos on a menu, I order them, but I still haven't found any that compare to Old Town's. They also make a salmon taco, but I'm not a fan of that particular fish...

Spring "More Than One Way To Fill A Taco" Chicken -
I will try it the next time were down there which is on the next weekend trip soon.
Rubios is a place my roomate worked there in Escondido and the sauce was nothing more than Reg yogurt and salsa mixed together, just plain yogurt too, not non-fat. The Lime is what really sets the flavor too it just brings all the flavor of the cabbage and fish together, but a little sliver goes a long way, The mahi was ok but the beer batter cod was the best and the most ordered
They are only in four states though and dont plan on moving this way which I dont get it cause once you have had one YOUR HOOKED! -
