I've read many posts of those that can't get the egg hot enough, yesterday I did it all, just to be sure.. then tried TRexing a couple NY Strip's
I pulled out the fire box, got all the ash out, aligned the air inlet, put it all back together. I hand stacked the lump pretty full. lit it, bottom wide open, and no daisy wheel.
Got up to 500. added more lump and more time.. got to 600 after about 45 min. There has to be something else. right?
I've heard of Medium egg's a few years old (which mine is) having too large of a firebox. my firebox only leaves about an 1/8" gap all around it when centered in the egg. that seem right?
anyway, steaks turned out very tasty and tender:

If the coals are rip roaring red adn it is obviously hair singing time, you may want to check the calibration of the thermo.
-
from your pic you are way too cheap on charcoal if you are looking for higher temps!! piled it in buddy then see what that will do for high temps!
-
oh yeah by the way the steaks look real good as well!! :woohoo:
-
mikeb is spot on - you need more lump in there. fill it at least to the top of the firebox.
-
Thanks all. I only tend to fill it up to the holes in the firebox unless it's a long cook. next time I'm looking for high temps I will go to the top of the firebox too.

I probably don't need to add this, but be careful opening the dome with a full firebox of lump roaring away. It's d@mn easy to lose some arm air, at a minimum.

Used lump is every bit as good as new lump -- fill that sucker up for all your cooks and refill when necessary.
