I decided to leave the brisket whole and season with DP Cowlick. Cooked 16 hours so far and at internal temp. of 186. Little late on the pull to foil but did it just now and added apple juice and returned to egg until it hits 195-200 internal sometime later this morning then will be wrapped in a blanket and put in the cooler until our 1 pm lunch.
Egg with a digi-Q and full load of lump and apple wood held 250 degrees like a champ so far and we've had some very wet and windy weather all night not to mention dropping in temp. nearly 30 degrees outside since the time I put it on yesterday. Hats off to the egg and digi-Q!

Here is a picture of the remaining lump after 17 hours of 250 dome temp....could of made it another 4-5 hours I bet if needed.
I used GFS brand (Royal Oak) lump and only opened the lid to the egg once and that was to pull and wrap the brisket.

Now that's a good looking brisket. There is a fair amount of shrinkage there too.
Make sure you take some pictures when it's cut.
