Smokin my 1st fatty but......arggggg!

Just put my 1st fatty on.
Jimmy Deans regaular logg with some Everglades seasoning.
But........I can't get my Egg lower than 300 degrees, even with bot vent completely shut tight :(
What am I doing wrong? How badly am I gonna kill the fatty if I can't get her to 275---250?
Gonna try baby backs this afternoon!

You will be just fine. That is where I normally cook mune. They will have time to get plenty of smoke.
The real question is do you really have 300 degrees? Be sure and check the thermometer in boiling water before you put on the ribs.
When both vents are closed you are not just lowering the temperature, you are smothering out the fire, if you go for very long, unless you have lost your gasket and have a big gap. -
Newbie jitters. I calibrated the temp before I started my 1st cook.
Got her holding at 250!
Do I need to turn the fatty & if so when? -
I assume its indirect cooking so no need to turn it over.
