Best Filler for Fattys

I am making a couple fattys tomorrow. I have only made them plain so far. I was thinking of putting a filling in them. Any suggestions?

Stick of cheese is what I see people do...and by stick I really mean sliver. Say 1/4 of a 8oz block lengthwise.

I really like using thin slice ham/turkey, and cheddar cheese.

Methinks you like a little rub as well - maybe one with a little sugar.

that was (iirc) a mix of Dizzy Dust and JH pecan and cherry wood for smoke.

I stuff mine with onions, peppers, mushrooms and cheese.

I like them plain, but instead of Jimmy Dean, use fresh ground rib meat with rub and maple sugar.
If you wanna put something in there, seems to me like cheese and roasted peppers makes sense.

First time I met you in Atlanta about 4 years ago you made sausage with Raging river and rib meat and I snagged some first thing in the morning. Wowza that was good stuff.

Hey Dennis. That's the stuff. There was a guy who used to post here from Austria. Sepp Aschbacher. Never forget that name. His family made sausage for generations. He loved the raging river, and emailed me a recipe he came up with.....2 tbsp raging river, 4 tbsp maple syrup and a pound of ground fatty pork shoulder. I really liked it, and started using rib meat since we always had lots of trimmings after the competitions.
Would have never thought of it if not for Sepp. What the hell was his handle anyways? He posted here a lot. Amazing what you can learn in this place.

I'll second that, ham and cheddar cheese is my regular fattie. The guys in the office also like a little pepperoni rolled in so I usually do one of each.
