i got a new knife!!!!!

i have been wanting a decent knife for some time and have been getting by with an el cheapo set that has served me well for the last five or six years, but the blades are all dull and half the tips are broken off.

we told each other we were going to get each other iphones for christmas (which we did) and she went out and bought me a shun ken onion 8 inch chefs knife!!!!

now if i could just learn how to use it properly....

Good luck with it. Actually, extremely sharp knives are much safer to use than a cheap, dull knife. They should all be used carefully.

japanese steel and adult beverages do not mix.. my japanese knives do not come out if i have had even 1 drink..
also they are very brittle and cannot go in 'the knive drawer" or put in the sink... wash and dry and put away safe as a habit,, my best friend put his shun in the drawer cost me $50 to have it re-ground.

I had no business buying another knife, but I just couldn't resist the beauty of the Shuns. I bought a Classic 10 Chef's about 6 months ago. I have never really gotten used to the feel of it. I always seem to go back to my workhorse 8 inch henkle. But I do pull out the Shun from time to time, just to look at it. Enjoy your new knife.

you'll love it and it will take care of you for years to come if you take care of it.

I have shun chefs knives of 6" and 10" and they are always the first ones I grab for. They hold a great edge and are by far the most comfortable knives I have.

next step is to get a good end grain wood cutting board. you'll be surprised how much it helps your knife work to have a firm, stable work surface.

I would like to have some new knives but don't know what the best quality knives are. All of the knives my wife has are dull and about 30 years old. Any advice would help.

I have only one really good knife, a Hattori. It was between it and a Shun. Got the Hattori off ebay at a steal is how I ended up with it. You will be very pleased with the Shun I assure you. There is no comparison with the elcheapos!! The only thing is they are a bear to sharpen till you get the right equipment and tequneque. If you need any help just ask and congrat!

I always heard that too, but funny thing is I have never been injured by a dull knife and laid myself open many times with real sharp ones!
