We have bought a whold fresh ham for Christmas. Can anyone help with how to cook and what to do. Rocket and I decided to try it. He has gotten his Maverick ET 73 and his BBQ Guru II and we are ready to tackle low and slows. Any help or encouragement would be appreciated. Thanks. Rosie

I just posted a thread on this very subject (see brined & honey-glazed Christmas ham). I posted my recipe, but I'm unsure of the cooking time. Probably around 16 hours, I'm thinking. You won't have time to brine it as long, but it should still work.

I recently cooked a fresh ham. I did brine it before hand for 24 hours, added a rub and a glaze near the end. I cooked it indirect at 325. Unfortuately I cooked it to 155 instead of 145. Because the egg, IMO, is so forgiving it was not ruined but I have to admit my wife and son did not think it was one of my better cooks. I on the other hand didn't think it was that bad.

Either in the archives or the PDF cook book that wiseone put together there is a recipe for a double smoked ham that is supposed to be very good. You might want to dig around for that. I don't remember where I saw it. Egret might have the recipe too.

You've got me wondering. Is this a "green" ham. Fresh, cut from the hog, not cured, not smoked? Nothing?
There is a world of differance between a fresh "green" and a fresh cured. Zip off a reply and I'll tryto help however I can . -
Hi Rosie! Question first...Is this a true "fresh ham" meaning it has not yet been cured? The "ham" being just a cut of pork meat? Or, has it been cured already? Two totally different cooking methods! Cant advise until I know what you have. Is it raw pork, or cured?
