Dry Brine Question

I have been reading about Dry Brining and have one question. I have a turkey with an 8% solution already. Is it ok to dry brine this with kosher salt?


  • Conventional wisdom suggests not brining an already brined turkey, unless you prefer the flavor of salt.
    I'd advice brining for a "natural" bird- one without any process brining.
