My wife got my X-Mas present early this year (Le Creuset 7.25 quart dutch oven) and I couldn't wait to tryout the new toy. Made a beef roast with potato's and carrot per, http://papadutch.home.comcast.net/dutch-oven-recipe-potroast.htm , recipe.
Turned out very good. I can't wait to try out other recipes in the future for dutch oven cooking and anyone that has a cant miss gumbo or jambalya(sp?) please share.
For her birthday I got her a new camera and took my first shots with last night during this cook. Curious to see how they look compared to old one.

Looks great. One suggestion, put some small ceramic tile on the platesetter and then sit the DO on the tile. This little space will keep anything on the bottom of your DO from burning before the cook is completed.
I follow this all the time in doing cornbread, roasts, etc in the DO. -
You can use your legs from the egg. Looks good.

You're going to love dutch oven cooking in the egg. Le Creuset makes some terrific stuff. Makes a great vessel for chili, stews, etc.
One thing I've learned. If you're concerned about discoloration (my wife was), you can use a dab of softscrub on the exterior to get rid of the smoke stains. -
