I looked through all the posts and think I know the answer, but to confirm......for all you chili cooks out there, your chosen method is dutch oven on the plate setter, yes? I've never cooked chili in my egg before and I'm eager to try it......
225 degrees? Uncovered? Or covered?

I use a cast iron trivet between the dutch oven and the plate setter to help reduce scorching. 250°F uncovered initially to add some smoke and reduce the liquid. Once it's about the consistency I want, I'll cover it and reduce the heat to 225°F.

You'll find it in the 2007 Eggtoberfest recipes in the casseroles section. -
I cook mine in a 7qt Cast Iron DO...platesetter feet up...I use the BGE feet and place the DO on the feet...i usually cook at 250-300 indirect for 2-3 hours...sometimes with the lid on sometimes off...just stir about every 30-45 minutes..it is not an exact science...

What size Dutch oven do you use. Is a 5qt big enough for that recipe

I've done it in a 5 qt., but, the 7 qt. makes your whole life a lot easier.

I just made my first Chili on the egg last weekend. I used left over Butt and ground beef. Fire roasted all the peppers, onions, tomatoes etc first. Then cooked in Le Creuset cast iron on top of plate setter (legs down)and using egg feet under pot.
Side note- I used fresh ground Chipotle and Smoked paprika for an awsome finished product-

I usually put the DO on the Spider or the grate.
I have used a 5qt, 7qt, 12qt and my 16qt. 16qt requires less lump to allow for the height of the DO/pot.
Once a lid is put on, the DO may as well go on the stove or in the oven. Kind of like taking a shower with a rain coat on.
