somethings wrong with my butt

the last thee butts i cooked are not as tender as they sould be. I soak them in a applejuice mix I brew up at least eight hours thow I dont know how much flavor it adds besides to the outerlayer.I just cooked two at 225 They cooked for 12.5 hours and reached a internal temp. of 180. they looked great but acted like a roast not a pulling pork. They where sold as boston pork roast at Rouses however they did have a small bone in each of them (is'nt that suposed to be a picnik). They were defrosted slowly in the frig. I dont know whats happening?Any help :unsure:

Try cookin to 195.

I just made a batch of Pork butt and I pulled mine at 190 and wrapped it and put in a cooler for 2 hours.
I pulled the bone right out. -
Get your dome temp up to 250 and pull at 195-200. You can pull at 180, but you have to double wrap in foil and get into an insulated cooler quickly so it can continue to cook. -RP

depending on the accuracy of your thermometer, you could still be in the plateau. definitely need to keep going. I usually cook to 195*. It will be falling off the bone.

Boston Butt come both bone in and out...bone in is better. I agree with the other folks... cook to 195 or higher and double wrap in foil, put in cooler and let it rest for 2 hours.
I'd also make sure your thermometer for both your meat and your temp gate on your egg are calibrated correctly...

p.s. A "picnic ham" will usually say "fresh ham" on the label and it will be the shape of a regular "ham"... -
the wrapping and resting lets the butt finish cooking and "melts" the collagen (I think that's what it is..) so that the meat will shred rather than slice....

except it's from the other end....
picnic is off the "arm", a ham is off the butt, while a butt is off the "arm' as well.

no wonder so many people keep Kosher!
