somethings wrong with my butt

the last thee butts i cooked are not as tender as they sould be. I soak them in a applejuice mix I brew up at least eight hours thow I dont know how much flavor it adds besides to the outerlayer.I just cooked two at 225 They cooked for 12.5 hours and reached a internal temp. of 180. they looked great but acted like a roast not a pulling pork. They where sold as boston pork roast at Rouses however they did have a small bone in each of them (is'nt that suposed to be a picnik). They were defrosted slowly in the frig. I dont know whats happening?Any help :unsure:
