Old School Ribs

Last night was another of my old school barbecued rib dinners. No sauce, no forks, no fancy sides, just my favorite accompaniments. Several weeks ago I did a similar cook.... this one had some links thrown in and I even served it up on butcher paper.

Butcher paper with smoked sausage rounds, crackers or white bread, pickels and/or raw onion, and a dash of hot sauce. They are Baby Backs, and yes really meaty. Both racks were too long to fit on my LGE, so I cut 3 ribs off of that earlier one, and yesterday I cut them in half.Happy Trails~thirdeye~Barbecue is not rocket surgery

How do you tell when they are done? I am always guessing. You can see in one of the pictures below how I try to judge.
