Stuffed Chicken Breasts???

I am trying something new tonight :unsure: ... Stuffing Chicken breasts with roasted red peppers, spinach, onion, garlic and parm cheese. I have a question...
How do I stuff the chicken? Pound it down and wrap it over the filling or cut a slit in the side and actually stuff the filling inside?

Yes pound down the breast, fill and roll.
You might consider wrapping in bacon too. YUMM -

They are good stuffed with Broccoli and Cheddar, Asparagus and Cheddar, Ham and Cheddar, Baby Bellas and Asiago, and Mozzarella and Sun Dried Tomatoes
You think we have done these a bunch -
If you are pressed for time, you can also slice the breast along the side and make a pocket. This version is equally tasty wrapped in bacon

Just like CW said, pound them flat, dust with a little rub, fill, roll, wrap in bacon and close with a toothpick.
I like jalapenos and swiss.
