I'm doing 2 pork butts and a brisket tonight for the big game saturday. Saw how Mad Max has his turkey setup and was thinking that's how I could do it. I was thinking of putting the drip pan on the pizza stone. Is there a better way? I have a plate setter and adjustable rig with spider, pizza stone and grill extender! Thanks for the help.

Invert the spider and put a drip pan on that. Works great.

I use a Stainless Steel deep dish pizza pan from Walmart about 5 bucks.

The drip pan on the pizza stone is fine, if as I assume you are putting the pizza stone on the spider.

Put the brisket on the bottom tier and the butts on the top. It will be like adding bacon strips to the brisket.

Put some spacers between your drip pan and the stone, it will prevent your drippings from scorching. -RP

    you might try:

    - spider with 14" bge stone as indirect piece
    - if you have a 1" deep pan, set drip pan on lowest bracket setting, level 1.5. this provides couple inches between stone and pan.
    - set oval grid on pan with brisket. depending on your pan, use foil to protect brisket ends. this gives 3.5 inches of vertical space for the brisket.
    - set porcelain grid atop rig with butts.

If you need to add lump during the cook, just lift the loaded rig out by holding under top ring, pick out the stone and add lump. Maybe two minutes to do.

If you have two large grids, don't need the spider: set grid on fire ring with stone, set rig on grid with pan, grid and brisket on level 1.5, butts with second large grid atop rig. This will let you fill the fire ring with lump.
