I picked up a 4.75lb fryer today and have it all spatchcoked.
Looking on the best way to cook it... people say raised direct but I don't have any easy way to raise the grid right now. Should I do indirect? What temp?
Thanks!

You don't have to raise the grid for direct, put the bird skin side down on the grill in a 375 degree egg for a minute or two then flip insert probe into breast and cook too 165 to 170 internal temp, Or cook indirect with drip pan skin side up in a 400 to 500 degree egg.

What's the purpose of putting the bird skin side down for two minutes?
