Last week I posted photos of my first cook on the egg...pizza.
Last night I cooked on the egg for the second time and made ribs for a few friends, including one who had never had ribs (no pressure!). This was my first time smoking anything, and my first time making ribs.
I used the rub recipe from BGE. It's a bit too salty for my taste. Slathered with Famous Dave's sauce. Other than the saltiness, the ribs came out great...tender and very smoky.
I used the 311 method and kept the egg temp between 225 and 275.
I smell hickory smoke!
Here they are after the first three hours.
Just about done.

Ribs look great. I'll second the vote on the DP rubs as they are very low in salt. There even two rubs available now without salt.LBGE Katy (Houston) TX

Nice looking ribs! Try John Henry's Pecan rub if you can find it. BGE Pecan rub is good also. Before long you will have a storage room of different rubs

I'll jump on the bandwagon - try DP rubs.
I try to plan ahead and season the night before then season again just before cooking. Makes a big difference.
I cook indirect, raised grid, bone down for the entire cook.

What time did you sauce? I sauce around 4hrs and let it ride for another 45 minutes or so (very light sauce by the way).
