i simply buy those cheap throw away aluminum loaf pans at the grocery and either cut the bottoms out completely or punch a bunch of holes in them with a screw driver or skewer. .. .they work great and when you are done you pitch them. ..

I don't know if it will work the same on the egg, but America's Test Kitchen once showed techniques for making a meatloaf that didn't even use a pan. This is the only meatloaf I make now and it is amazing. They take heave duty aluminum foil, and make a nice thick heavy platform out of it and perforate the bottom so the fat can drip through(a hole about every half inch). Then they set this aluminum foil on a wire rack for support and a drip pan under that. On top of the foil they build their meatloaf as a box. I believe it is 8 inches long by 4 inches wide by 2 inches thick. A nice squared off brick. Then they cook that so 5/6 edges get a nice browning. I bet it would work very well on the egg and I am going to try it. I know it isn't what you were looking for, but might be helpful. If you want I can dig out their recipe, it has a really good glaze recipe with it too.

Thanks to all that responded. I can always count on help from the eggheads. I'll let you know how thing work out tomorrow. Right now I have Cordon Bleu on the Egg. Some stuffed mushrooms are about to join it.

I posted this the other day. You really don't need a mesh pan, this perforated grill works great as long as your meat mixture isn't too wet. Drip pan below.

That looks like the setup I was talking about, except no rulers and punching holes.

Don't need no stinkin pan, sounds great. I have the grid much like you use, and, it is sure easier not to screw around with a pan. About to give a try around about 2 hours from now. Thanks

I got mine at a local grill and hearth shop. I wouldn't swear to it, but I think it's Weber product:
