Spatchcock a Cornish Hen?

Was gonna do a couple parmesan hens tonight, but discovered I'm out of parmesan and I'll be damned if I'm getting in the car again for ANY reason. So was struck (must be this jug wine) with the idea of rubbing the hens with whatever that rub is leftover in that rubbermaid container and spatchcocking the little devils.[p]Anyone see any reason they would protest that behavior?[p]mShark

    I nearly always spatchcock these little guys as the cook is alot more uniform.[p]Plus, they're so darned cute.[p]Obviously, they're a really fast cook.[p]Janet

    Janet,[p]Well, ended up sitting them both on one of those potato stands. Looks like they're sitting on a loveseat. Coated them with some leftover brisket rub and sat them in a pan with some Japanese beer in it. Should be perfect in about an hour, wouldn't you say![p]Will spatchcock next time!
