Brats, Onions, and Peppers

This was a first for me. I took some cheese brats and laid them on top of a bed of onion and green pepper. The onion and pepper were coated with a little EVOO and dusted with Wolfe Regular.
I cooked them indirect to 140 internal and then finished them with a quick sear on the grill.
While I was waiting I had a quesadilla with some hot sauce and pico that was PDG.
Here is everything as it came off the grill.
Don't ask how I came up with this combo, but I was struggling to decide between tacos, fajitas, and sausage, so I ended up making a taco with flour tortillas, sausage, onions and peppers, pico and cheese. PDG!
The sausage flavor on the onions and peppers was excellent.

only thing to add is you have to let a brat soak in a bath for a little bit. That is a beer bath.

Never met many things that don't benefit from a little pork fat!! Nice looking cook. We call that a Sausage Wrap at all the Taco shacks around these parts. YUM! -

wonder if you could cook the brats in a beer bath on the egg; don't think the peppers would benefit from that. we boil our brats in beer on the stove before grilling.

That looks great and bet the onions and peppers had good flavor from the brats I like that.

Man that looks gooood! I've only done brats on the grill, but will be doing my next brats like in the pics.
