Any ideas on what to do with a gigantic zucchini growing in my garden. The zucchini is now bigger than my forearm (and I am not all that small a person). We are having neighbors over tomorrow so I am going to do two beer can chickens with DP Raging River and some roasted red potatoes. Starting with a tomato (from the garden also) bruschetta and finish with peach pie!

It sounds like it may be too big to cook up as it wood be stringy. I take my large ones and shred them with a grater, then make zucchini bread or muffins with them for later.
I am planning on taking normal ones, slicing them down the middle length-wise. then carve out a cavity (like a canoe) and fill em with cooke sausage and sprinkle them with parmesean. I would throw em on the egg at 325 or 350 until cooked and cheese is melted. I have not done it yet, so who knows?
Good luck! -
Thanks, I dont need to re-invent any wheels as I was going to try and do stuffed zucchinis this weekend!

I took a couple large ones last weekend (granted, not THAT big) and scooped out a channel for stuffing. Took about a cup of lump crab, cup of sauteed onion/celery/bell pepper, added some smoked jalapenos and Shaking the Tree. Mixed all that up with an egg and some bread crumps - stuffed the Zuch and hit the egg for about 15 minutes at 350. YUM!!
