Split Chicken Breast, Mac & Cheese, No Egg Cake

Wife bought a 4 pack of huge split chicken breasts for about $5.00. For grilling, it beats boneless/skinless any day of the week and twice on Sundays.
No fancy seasoning. Just good trusty Dizzy Dust.
Cooked indirect (legs up) at 400 degrees on a raised grid, bone side down, for about 45-50 minutes (internal temp of 170).
Pics below.
Made a small pan of Mac & Cheese.
- Boil macaroni until tender. Drain. I used about 4 oz
- Melt 2 tablespoons butter on medium heat.
- Add 2 tablespoons flour and whisk until smooth
- Add about 1 - 1 1/2 cups milk. Stir until smooth
- Add minced onions, bacon, cayenne, and salt to your taste
- Remove from heat.
- Add about 2 cups cheese (I used a Mexican 4 cheese blend) and mix together.
- Mix in macaroni.
- Put in a greased pan. I used a really small throw away foil pan.
- Top with cheese.
- 350-400 for about 20 minutes.
I had planned on making cornbread, but someone used up all the eggs....ahem, my wife. So, I decided to break her new stoneware bunt cake pan in and make a "No Egg" Cake recipe I found online. When I first tasted it, I was iffy about it, but it grew on me with each bite. It didn't rise very much.....I wonder if the recipe is more intended for sheet cakes.
1-1/2 cups flour
1 cup sugar
1/4 cup cocoa
1 tsp vanilla
1/2 tsp salt
1/3 cup oil
1 tsp white vinegar
1 tsp baking soda
1 cup cold water
Mix all ingredients together until smooth. Grease and flour a loaf pan, and bake for 45 minutes at 350° (175°C). You can also add chocolate chips and/or nuts.

I need to get into making desert on the egg. I really need to look at sugar free fresh fruit with little flour in it.
Any suggestions? I have had Bariatric Surgery and have lost 161 lbs in 15 months. I now eat only what could be called fresh as close to natural possible foods. I bought the egg because I get enjoyment from FLAVOR not quantity now. The egg has not let me down. That is why a mini has been so good for me. 1 chicken breast is two meals for me. I can tolerate raw honey in small amounts for a sweetener. May try to make a Peach Crisp and use some type of crushed nuts as a topping rather then flour and butter.
Might me a seperate topic.

We've been trying to eat healthier as well. I haven't done a dessert on the BGE yet, but I'm going to try the no egg cake. Something seems wrong about no egg on the egg. :laugh:LBGE Katy (Houston) TX

I used a Mexican 4 cheese blend in the mix and topped it off with Mild Chedder (because I used the last of the Mexican blend).
