Bacon unwrapped filets and roast corn

Not sure why but my bacon did not want to stay in place. I had two picks in each. :( Finally quit fighting it and just cooked. Turned out quite tasty. Added some roasted silver queen corn seasoned with salt and pepper. Nice meal.

    Great lookin cook Bama! I did 'Q-Burgers' n Vidalia onions on the small tonight but forgot to take pix :blink: :blink: ..gotta love that silver queen on the egg! B)

    When you make the apple or peach burritos what do you coat the outside with before cooking?

    You know what? Mrs ~t~ likes the bacon on a fillet too and I always struggled when cooking on a grate; I don't know if it has something to do with the coefficient of shrinkage or what.....but when I started using the TRex method with a skillet or griddle, I had better results.

    I do buy 2 strips of the thick deli bacon when I pick out the steaks, and even though this picture shows 2 toothpicks, I use 4 or 5. Before the first turn I clamp the fillet with the long tongs and lock them, giving the bacon a crisp up where ever it touches....then cook the other side.

    That is one way I did not think of doing them. I have a CI skillet. May have to invest in a spider soon. Thanks.

    Been a while since I made any of those, but I use an eggwash then sprinkle with a strategically mixed cinnamon/sugar mix..I have heard some use a butter spray...I say..eggperiment and see what you like best and post pix of your results ;)

    And even setting it on the grate in the regular position, A CI skillet works real good if you give it a few minutes to get up to to the right temp.
