what is best way to fix pork loin to keep it from drying out.

Same answer as 5 minutes ago
Cook to 140 internal, foil and let sit for 30 minutes. Yes it is safe to eat pork loin at this temp. -
wrap it in sausage
then wrap it in bacon

325-350 direct turn regularly was done 145° porkloin 160° sausage whrn the bacon was crispy less than an hout. note it was a very thin pork loin if you get thicker one i would set it on a rack above a stem tray pan or go indirect
