If I want to do direct grilling then indirect, is it OK to add a cool platesetter to a hot grill or does it have to be on before lighting?
I'm wondering if anyone's has cracked.

It will bring the temp down because you are adding ceramin mass, which in your case is probably desireable. Just keep an eye on it because it will take some time to stabilize after the add.
