First Brisket - Elder Ward

Well, it's 10:30pm and I'm waiting until midnight to start my first brisket on the egg for lunch on the 4th.

Everyone in the house asleep, check.
Have brisket, check.
Egg setup and ready, check.
Temp probes ready, check.

Waiting up to start a brisket at midnight which no one tomorrow will appreciate my dedication to perfect smoked meat, check.

    I'm with you, but the payoff tomorrow will be when you see all those smiling faces as they bite into that delicious brisket. I got two 7 1/2 boston butts going now and plan on serving 15 peeps around 3 pm. Good luck on your cook.

    Well, its 12:38am and the temp has stabilized at 268*, its night, night time for me.

    Pf couse after one more check of the temp! B)

    I do brisket just because I like it. Its just lucky everyone else does too. I have not had leftovers more than once. I cannot find a brisket to big...
