First Brisket - Elder Ward

Well, it's 10:30pm and I'm waiting until midnight to start my first brisket on the egg for lunch on the 4th.

Everyone in the house asleep, check.
Have brisket, check.
Egg setup and ready, check.
Temp probes ready, check.

Waiting up to start a brisket at midnight which no one tomorrow will appreciate my dedication to perfect smoked meat, check.
