old skool butts

the other day, someone commented on all my thermometers and draft controlers and said they thought this was supposed to be fun, not scientific. so i decided to do two pork butts old skool with nothing but the egg. i didn't get much sleep overnight without the draft controler, but the butts came out excellent anyway...

I've been doing butts (and picnics) that way for eight years with no problems.

I've been old skool for quite some time ... just been using my thermopen and the BGE standard thermo on the egg. I found all the gizmos fun in the begining but its not that hard once you build a good fire and cook about 6 cases of butt. I not against technology .. I've just always watched my fire ... I guess it's like cruise control on your car ... once you try it you find yourself using it all the time.
I had a thunderstorm blow thru on Friday night right after I started 2 butts 8pm ... got up with the lightining once to check them @ 1am ... chuggin away at 250 ... got up at 8 am and the egg was at 300. Choked it off a bit and removed the perfect butts at 10 AM. After that they went in to a cooler for 3-4 hours ... pulled them for a late afternoon snack and dinner -
Wow! Those butts look they wanted to pull themselves. Perfect!!!!
