Pork Rib Trimmings

The last time I made ribs I started with packers cut and trimmed to St Louis style. I saved the trimmings and want to have some for dinner. My thought is to grill them over a low fire to something near 190 internal. However, I have not done this before and am looking for advice.

That sounds about right to me. I cook them the same way I'd cook the ribs they were once attached to. But the cook goes a lot faster. Maybe 3 hours.

Try grinding them and making Chorizo. mmmmmmmmm
If you make Chorizo, use some of it in Paella. mmmmmmm
