Rediscovering bacon

Hey, I was cooking breakfast for a friend yesterday, and wanted to really impress him so I fired up the egg and smoked some thick cut bacon (which already came "hickory smoked") with some Jack Daniels barrel chips, 250°C for about 40 minutes. I flipped them every 10 minutes or so. The results were life-alteringly good bacon, crisp yet with a bit of chew, and intense smoke flavor. I highly recommend egging your bacon!!! The one problem was some flare ups during the turning process, so I suggest turning half a pound at a time, closing the lid to kill the flares, then go back in to flip the other half. Have fun!

So, I'm assuming this was direct, on the grid. Grid at regular height or extended?

direct, on the regular height. I thought about adding in my plate to go indirect, but decided against it.

i use a rack sitting about a 1/2 steam tray pan to catch the drippings. bacon hangs from the rack not laid flat so you can cook tons of it.
below pictured is my "i support bacon" wrist band :laugh:

If you really want some yummy bacon bacon visit Playing with fire and smoke web site. A member of the forum AKA thirdeye you will find many good recipes there.The bacon is called Pig Candy.It will vanish from your plates.

I do bacon indirect all the time. It's more of a hassle, but the smokey flavor is better than using direct heat. Also, no flare ups, just a messey drip pan to clean up. I keep it below 400 degrees and cook it about 30 to 40 minutes.(depending on your taste)

This is about the only way I cook bacon anymore.
I cook it indirect and I use a pizza screen or disposable grill screen. Be sure to have a drip pan below.

having computer issues. go to playing with fire and smoke read his bacon stuff i use hi mountain buck board bacon cure. e-mail me thru the forum or at wfricker [at] verizon [dot] net and i will get you info. been a long day and i start early tomorrow . the bacon in the pic was amazing.
