Egging Trout

My Dad and I caught a few brown trout over the weekend. They must have been hungry because they were devouring our flies. Anyways, I have a few trout filets that have been marinating a bit. Any cookiing ideas out there for dinner? Smoke, Sear, foil?

EVOO on the skin side. I kept this one real simple, salt, pepper, lemons. A little Alder wood for smoke.
250 direct until it flakes, just a few minutes.

We threw some butter and old bay on for a bit. I had the egg cooking some corn for about 30 minutes before hand. Let the temp get between 375 and 400 and it took 8 minutes. I put the filets on some foil so it wouldn't fall into the abyss. I do not like fish, but I have to say, the trout was pretty damn good.
