What is the best cut to make steak sanwiches from? My wife picked up some flat iron today, is this good for sandwiches?

Flat irons....mmmmm....it is one of our favorites
we do them as steaks with bernaise or
cook and cut thin for fajitas or
thin for cheese steak sammiches
it just depends on how you season them...no matter what we are using the meat for I sear at 650 for 60-90 seconds per side...take off & let rest..then put back on the BGE at 400 for 3-4 minutes per side... :woohoo: -
