Do I pre-cook the sausage before stuffing it or stuff it uncooked?

You could try a Triple Threat, pork loin stuffed with apple sausage and wrapped in bacon. YUMMMM....

Stuff it uncooked. more flavor and it's a lot juicier that way. It really is a crowd pleaser!

I would worry about the safety of the sausge if left uncooked. Most stuffing recipes call for the ingredients to be precooked and the stuffing to attain a temp of 180 to be safe.
Also,the outside Pork Roast is considered cooked at 155. However, sausage is not considered safely cooked until 180, at which point the Pork Roast woudl be over done.
