First 3-1-1

Picked up a 1/2 rack (slit lengthwise) of back ribs from Wally World, and did a 3-1-1 today.

While on the grill I was somewhat sceptical, as none of the signs you guys always talk about were there.

Anyway, had them in Byrons rub and some olive oil for a couple of hours, dome 250 and a rib rack (upside down Vrack) 3 hrs indirect spraying apple juice/apple cider vinegar mixture (2:1) every hr, 1 hr aluminum foil w/ 2oz apples juice, and about 35-40 minutes with just light sauce.

They came off the rack like this:

After I cut them and started in on my first rack, I skipped the BBQ sauce altogether, and had the presence of mind to take the picture above before eating the second rack. I ended up skipping fixings, salad, etc and just had 2 racks. While maybe not best ever, they were delicious.
