My first Brisket ever.....pics inside.

This was my first brisket ever on any grill, glad it could be on the large egg. It was a flat cut a little over 5lbs. I used Susie Q seasoning(family owned), black pepper, course sea salt, paprika, garlic powder & red pepper powder. I used 4 decent sized chucks of Hickory. I left it at 250 degrees for pretty much the entire 9 hours, except for the last hour I wrapped in foil and cooked it in the egg at around 275. Took it out and did the entire dry cooler method and let it sit for about an hour and half before slicing. And I got this....

Thanks. Yeah I was pretty impressed with the smoke ring too. Really happy how it turned out especially with the horror stories ive read on it being the hardest piece to cook. The flavor was incredible and the smoke not overpowering at all. It was a tad on the dry side once cut and placed on the plate 5 minutes later. Still pretty tasty as I know brisket dries out quick.

I've done 5 briskets and most of them were editable not great. Supposed to be a hard piece of meat to cook. Someone said there's a knack to it and I've looked under everything and the high shelves too for this damn knack. Guess you found it right off the bat.
