Cooking my first brisket. Started the large egg at around 9:00 last night. It seemed to just settle in around 285, so I let it stay there for about an hour to make sure it would stay. Put the brisket on at 10:00. Checked it about 3:30 and it was right on, could not have been more proud. Almost woke the wife to tell her, but decided I wasn't that proud.
I knew the temp. was a little high at 285, but this morning it is at about 175 in the middle of the flat. Will probably get done sooner that I wanted, but that it is one thing I have learned over the years about BBQ.... you have to be flexible.
By the way it is a 10 pounder.
