I brined this in a mix of kosher salt, Raging River Rub and Turbinado sugar for only an hour. Then it was coated with more RRR, some black pepper and voila. Fresh redfish is special! Scott

The redfish looks great! Can't get it much fresher than that. We also love Ragin River. The most frequent use is on crder planked salmon.

Sorry Bro. I have done all that I know to make my pics visible here. They are definitely samll enough @ 550x412 pixels. I cant see the first one myself, but can see the other 2. Some can see it when they hit reply and scroll down. That doesn't change it for me.

I'd love to know how to fix it. The fish was 22 inches and about 4 pounds. We caught 4 and were allowed to keep 2. However, I only keep what I know I'll cook right away, so we just kept the one. A stellar day in one of my favorite places with my youngest son! It's all good, Scott

Did u leave the scales on the bottom ? -
Was the fish cooked on the wood plank? How does that differ from putting on the grill?
Appreciate any imput on how to cook fish and how long. -

The planks are a nice surface to cook fish on. You put them on before the fish and add the fish after the plank gets hot and starts to crackle. They come in maple and cedar. I cooked this for 20 minutes at 400 dome and used a half a handful of oak chips. The filets were about an inch thick at the thickest end. Fish cook times and tastes vary greatly. Mahi and redfish are quite similar in texture, so times would be similar. Scott
