OT...Stretching the Pot.

As I was growing older (not necessarily "up"), one of my Sainted Mother's favorite meal stretching strategies was to enhance the bottom of the bean pot. Either remove, or not, the salt pork, and add some drained, ground beef with more garlic and onion. Simmer until all the flavors meld.
I love mine on buttered bread with salad, slaw or cabbage. Of course, about 3:00 a.m., I'm not a very welcome individual in our bedroom.

I don't know if it's an omen or not, but this is the first comp i have attended where I wasn't scrambling to get out the door.
Trailer is all packed except for the meat. I just need to go home, hook up the trailer and head north. :silly: -
when I lived at home, I would put together a "pan of week" It included, left over taco meat, chile, baked beans, some chicken pieces, and a few other items. I was good slop, something we looked forward too each Friday.
