OT...Stretching the Pot.

As I was growing older (not necessarily "up"), one of my Sainted Mother's favorite meal stretching strategies was to enhance the bottom of the bean pot. Either remove, or not, the salt pork, and add some drained, ground beef with more garlic and onion. Simmer until all the flavors meld.

I love mine on buttered bread with salad, slaw or cabbage. Of course, about 3:00 a.m., I'm not a very welcome individual in our bedroom.
