I'm doing 3 sets of 24 each wings & drumsticks. Planning on 350 dome direct but concerned that the grease drippings will make for a sour cook on batch 2 or 3. Would I be better off indirect with a drip pan? will be using wing/leg racks. My silverhair neighbors will eat good today (I hope).

I think your concern is a good one. Go indirect.

Any more, I do all fatty chicken pieces indirect with a raised drip pan.

Thanks Essex & THrRoff I just put the plate setter in. Just enough dome clearance for the 2 racks. Gotta order the spider today.

I would use the platte setter. It seems to alway turn out nicely when making multiple batches.

Remembered this picture from our Easter cook. That is a grease fire on my plate setter. That is why I now use a raised drip pan (on balls of aluminum).

I'm thinking the 350 might be a tick high. I cook in the 250*-275* range, planning on 2 hours for the cook. When using two racks I have the grate in the normal position, and use less charcoal to keep the distance as great as possible from the coals to the food. You will see some white smoke during the cook, but also get some additional flavors from the fats dripping on the coals
With an extender ring I can only get one rack dead center, but I like the extra height.
For anyone that has not used them, they are the bomb

I have 2 racks on right now with the platesetter and it fits but just barely. Had to seperate a bit for the dome probe. Charging the battery for the camera now and will post in a bit.

This is both racks almost done (first of 3). They did fit but not by much with the platesetter & racks. Spider & adjustable rig already ordered to make it easier. I'm really in to easier. .
Also did Vidalia1's nutella desert. It's great & neighbors loved it.
