Wanted to try stuffed chicken with dark meat instead of breasts so here's how it went. Got some really nice thick skinned poblanos and roasted them in the toaster oven. Why fire up an Egg for 2 peppers?
Once roasted, I put the peppers in a bowl and covered them with plastic wrap. I let them steam for about 40 minutes. Then I peeled the skin, which came off very easy.
Then I pulled out the core and removed the seeds and sliced it into strips.
Then I flattened 6 boneless skinless thighs between plastic wrap into 1/4" thick pieces.
Rolled them up with Colby cheddar and a pepper strip, then wrapped with bacon to seal the open ends.
Then I seasoned them with some left over blackened fish rub from last night dinner, and parked them in the freezer for about 30 minutes.
Then cooked them on a raised grid indirect at 350 dome for 1.25 hours.
They didn't suck! -RP

haha!..didn't suck!?!..you wouldn't be the master of understatement would you?..they look awesome!!..I'm jealous..I jus did some boring old 1 3/4" thick prime cut strips Trex'd with mashed taters and egged sugar snap peas, onions and shrooms...your chicken looks great!

Kim and I are trying to slim up before we hit all these fests, so we are doing the Atkins thing. Its pretty hard to get excited about food when you are dieting. -RP

I will have to agree those look good. I need to work on getting my bacon wrapped stuff to look like that. Wife says it is not brown/ crisp enough. Any tips!

Get it up high in the dome and don't be afraid to over cook it. I'd rather have crispy bacon or no bacon at all. -RP

THOSE LOOK GREAT. I always like to see differant things. How do you debone a thigh? Just cut to the bone and then roll bone it out with the knife?

I've done it lots of times, but I'm very sloppy with it. I just buy boneless skinless thighs when they have them. How did the jerk pork turn out? -RP

Looks like company food.Why fire up an Egg for 2 peppers?
~ Blacken the peppers on all sides over high direct heat. (3 to 4 minutes on each side)
~ Place the peppers in a closed brown paper bag and allow to steam for 10 minutes.
~ Cut the top and bottom off the peppers and slice one side so they will lay out flat.
~ Brush the outer skin off of the pepper and slice the flesh. -
i love wrapping thighs those look great here is one i did a while back... de-boned thighs boiled a little celery and put blue cheese in them cooked indirect at 275 and pulled them dunked them in franks wing sauce and had boneless wings all in one bite
cheese ran a bit but was awsome..... maybe i will try to plant some poblanos in the garden.... if it ever quits raining :(happy eggin

Looks incredibly good there, AZRP. What are you going to call that dish? I'm only asking because I know people are going to want to copy it and I've noticed that "the chicken" is already taken. :silly:

Very nice cook, I knew it would be great when I saw the bacon in picture #4. Could you freeze the cheese first? I'm not sure if cheeze can be frozen.

What a great idea to use the bacon to seal the ends. Those look great. At first I thought that the cheese sticks were carrots and though they were going to be hard to cook and get done at the same time as the chicken. LOL

I like that idea of sealing the ends of the rolls with bacon, Randy. One of the reasons I don't do your delicious stuffed breast recipe more often is the hassel of getting the rolls to seal on the ends. I'll have to try this one out this week...it looks a lot easier to assemble.
